Grateful to our friends at @yearextravel @yearextravel.ye for making this visit possible! I’ve driven past this village countless times, always mesmerized by its beauty — and finally got to explore it up close on our back from Haraz trip with @socotrina . Al Hajar, founded in the 12th century as a strategic fortress, sits nearly 1,900 meters above sea level with stunning stone homes built entirely without mortar. There’s only one way to get in and out through its main gate, adding to its timeless charm. Truly one of the most beautiful places I’ve seen in Yemen. Big thanks to Ammar and Sultan, the two amazing boys who gave us a tour!

In Yemen, many women make and sell Bukhoor to support their families—but the truly special recipes are often kept secret. What makes Oum Aseel so special is her generosity. Not only did she teach me step-by-step, but she also allowed @nashvillehiddengems to film the entire process and share the full recipe with you all below!

‎اخلطي جيدا تولة واحدة من زيت العود المركز مع
‎450 مل من زيت عطر العود الكمبودي و25 مل من زيت عطري اخر من اختيارك. واتركيه جانبًا.

‎- احضري 12 طبق بخور وادهنيها بقليل من خليط زيت العطر ، واتركي الباقي جانبًا لنهاية الوصفة.

‎- في قدر كبير وعلى نار متوسطة، امزجي 2 كجم من سكر النبات البودرة مع 500 مل من ماء الورد واخلطيه حتى يذوب السكر ويمتزج جيدًا. ثم أضيفي إلى القدر:
‎ 30 مل من عطر الزعفران، ربع ملعقة كبيرة من عطر العنبر، 30 مل من عطر الورد، 25 مل من عطر المسك السائل، 42 غ العفص البودرة ، 20 غ من مسحوق المثبتات، 20 غ من مسحوق الظفر، حبتان من الهيل الإثيوبي المطحون، 44 غ من مسك حجري، 9 غ من المثبتات حجري.

‎- بمجرد أن يبدأ هذا الخليط بالغليان، أضيفي 122 غ من العود المطحون، 26 غ من العود الماليزي، و110 غ من العود الهندي.

‎- اخلطي جيدًا واتركي هذا الخليط يغلي لمدة 20-30 دقيقة. ستعرف متى يكون جاهزًا باختبار السائل بالضغط عليه بين أصابعك. يجب أن يكون لزجًا كالصمغ.

‎ - عند هذه النقطة، أطفئي النار واخلطي 62 غ من العود المعطر، و65 غ من العود الكمبودي الاصلي، ومزيج زيت العطر الذي احتفظتي به جانبًا في بداية الوصفة. اخلطي كل شيء جيدًا، وتأكدي من مزج كل شيء.

‎- عند هذه النقطة، قومي بتوزيع الخليط الساخن بسرعة كبيرة بالتساوي في الأطباق المدهونة بالزيت واتركيه يبرد لمدة ساعتين حتى يتماسك، ثم أخرجيه من الطبق واتركيه يجف لمدة يومين.

‎- غلفي الاقراص بأحكام بورق قصدير

‎ يمكنك تقديمه كهدايا فاخرة ، أو التبخير به في المنزل، أو بيعه!

‎كلما طالت مدة الاحتفاظ به، كلما تعتقت العطور أكثر وكانت رائحته واحتراقه أفضل.

اليوم طابخت مع ابن عمي أسامة وزوجته @aseel_for_bakhor — من أقرب الناس لقلبي وأعز أهلي في اليمن. زوجة أسامة من نفس القرية اللي منها أهلي، ووجودها في حياتي نعمة كبيرة. كرمها وحبها للمطبخ ألهموني كثير. كثير من الوصفات اللي شاركتها معكم كانت بفضلها وبفضل التقاليد اللي نتشاركها.

طابخنا اليوم أكلة شعبية من قريتنا حيفان: عصيد مع حلبة مطحونة في المرهك. هذه الأكلة البسيطة والمشبعة مش بس طعام، بل تعبير عن تراثنا، وتفكرنا بذكريات غالية، ودليل على الحب والوحدة اللي يجمعنا الأكل.

المكونات:

للحلبة:
• ملعقتين كبار حلبة حب
• شوية ماء
• حبة طماط مقطعة
• قطعة حلقة (مكسّرة قطع صغيرة)
• 3 حبات فلفل أحمر ناشف
• ملعقة صغيرة كمون مطحون
• ملعقة صغيرة ملح
• فص ثوم

للعصيد:
• كوب دقيق بر
• كوبين ماء مغلية
• كوب ونص ماء ساخن احتياطي
• ملعقة صغيرة ملح

الطريقة:
1. بلّل المرهك (الهاون) بشوية ماء وحط فيه الحلبة وابدأ اطحنها، ضيف شوية ماء وانت تطحن عشان تلين وتنتفخ.
2. لما تشوف إن الحلبة صارت كأنها كريمة مخفوقة، ضيف الحلقة واطحنها معاها.
3. بعدين حط الكمون والملح، واطحن الطماط معها.
4. ضيف الفلفل الناشف، واطحن فص الثوم كمان، ولما تمتزج المكونات وتكون ناعمة، خليها على جنب.
5. في قدر، حط كوبين ماء مغلي، ملعقة صغيرة ملح، وكوب دقيق بر. حرك بمعلقة خشب لحد ما تمتزج تماماً.
6. استخدم ظهر المعلقة الخشب عشان تفرك العجين على جوانب القدر وتكسر أي تكتلات وتخليها ناعمة. لو احتجت، ضيف شوية ماء ساخن لتسهل عليك العملية.
7. لما تصير العجينة لينة وناعمة، قدمها جنب الحلبة المطحونة، وبالعافية!

Coming Home After 5 Years

@nashvillehiddengems and I grew up in America, frequently visiting but not always feeling a deep connection to Yemen.

In 2020, everything changed for me—my mom traveled here to visit my grandmother and passed away shortly after. I made it just in time for her burial, and from that moment, Yemen became something so much more to me.

My grandmother is the only grandparent I have left. She meant everything to my mom—so much that she risked traveling here during COVID, even if it was the last thing she did. Being here with her now makes me feel closer to my mom in a way I can’t even explain.

For @nashvillehiddengems, this trip was about something just as personal—his grandmother. His grandmother is also the only grandparent he has left. Anas became very close to his grandma when she came to live with his family in Nashville in 2020. I got to meet her, and I immediately understood why this trip meant so much to him.

Watching my family embrace Anas like one of their own has been so special. Even my grandmother told him, “You’re my grandson now.”

This trip reminded me that Yemen isn’t just a place—it’s my family, my memories, and my connection to my mom.

We also wanted to show a side of Yemen that brings joy to those who miss it. So many Yemenis abroad only hear about the hardships, but there’s beauty, love, and resilience here too. We hope this trip lets others see the Yemen we know and love.

My Khala Galela is one of my biggest inspirations when it comes to cooking authentic Yemeni dishes.
Back in America, I’m always messaging her on WhatsApp, asking for recipes and tips. To finally be here in Yemen, cooking alongside her, is such a privilege—one that I’ll cherish forever. She’s usually quite reserved and would never step in front of the camera, but she made an exception for me, and that means the world 💛

We made Kaak bil dokhn for Eid. These are made with millet flour so they’re completely gluten free! I hope you give this recipe a try - it’s a special one!

Kaak bil Dokhn (Yemeni Millet Cookies)
Ingredients:
• 200g butter (room temp)
• 6 pieces of Kiri cheese or triangle cheese
• 3 tbsp powdered sugar
• 7 tbsp powdered milk
• 1.5 cups millet flour
• 1 tbsp baking powder
• A pinch of salt

Date Filling:
• 1.5 cups date paste
• 2 tbsp neutral oil
• 1 tbsp ground fennel

How to Make It:
1️⃣ Cream together butter, cheese, powdered sugar, and powdered milk until light and fluffy.
2️⃣ Add millet flour, baking powder, and salt—mix until a soft dough forms.
3️⃣ Combine date paste, oil, and ground fennel. Mix until smooth.
4️⃣ Lightly flour your kaak mold. Flatten a piece of dough, add the date filling, and shape as shown in the video.
5️⃣ Bake at 350°F until the bottoms are golden brown. The tops will stay light due to the millet flour, but don’t worry—they’ll firm up as they cool!

Enjoy these nostalgic, melt-in-your-mouth cookies with a cup of tea. Let me know if you try them!

I’m a Yemeni-American chef, born and raised in Mesquite, Texas—a quiet little town where I never quite fit the mold. I struggled a lot growing up: school wasn’t my thing, I was always getting into trouble, and for a while, it felt like I was just drifting through life with no real direction.
